Current flows from copper to bismuth on one side, generating heat. On the other side, current flows from bismuth to copper, sucking the heat out. The result? A temperature drop of up to 40 degrees Fahrenheit below the ambient temperature at the hot junction. Not bad for some wire and a battery.
In an electric cooler, the hot side faces outward. The cold side faces inward. To get enough cooling power for a full lunch, manufacturers pack these units with tons of these junctions. The more junctions, the colder the inside.
